Also called Bai Mu Dan this gorgeous hand processed tea is made from plucks each with one leaf shoot and two immediate young leaves. White teas are known for their delicate flavor. This one is our favorite for its complexity and a stronger than usual body.
White peony is a slightly oxidized tea. The plucks are exposed to the sun for long periods of time and then stacked for oxidation, where it takes the characteristic aroma and flavor. The leaves are then baked to dry for packaging.

This tea is very leafy. One teaspoon might not hold enough tea to make a strong enough cup. Experiment with 2 – 3 teaspoons for your desired strength.
